Need a quick and easy Thanksgiving appetizer? Look no further! This raspberry baked brie is a beloved app in our house and is so easy to make--all it takes is three ingredients, brie, puff pastry and raspberry chipotle sauce, to get a delicious and impressive app for your guests. I love this recipe because of all the textures. The ooey, gooey melty texture of the cheese combined with the delicate layers of puff pastry, the sweet-spiciness of the raspberry chipotle sauce and the crispness of the apples! Yum!
Simply unroll the puff pastry sheets until they're flat, place the brie wheel on top of the puff pastry, add some raspberry chipotle sauce, wrap the brie and bake at 375° for 25-30 minutes, or until the puff pastry is golden brown and the cheese is melted.
I'm partial to using Pillsbury Crescent Rolls for the puff pastry and Fischer and Wieser's Razzpotle Roasted Raspberry Chipotle Sauce, but you can also use other jams or honey in its place. On Thanksgiving, we tend to use the disposable aluminum pans because it helps cut down on dishes. Alternatively, you can use a baking sheet with parchment paper. However, don't cut off the rind of the brie, because that holds in the melted cheese while the puff pastry bakes--trust me, you won't even notice the rind once the cheese is done!
Slice with a cheese knife and serve warm with sliced Honeycrisp or Gala apples and you'll be in brie heaven!

Ingredients
- 2 (8 ounce) packages puff pastry (like Pillsbury Crescent Rolls)
- 1 wheel of brie cheese
- ¼ cup raspberry chipotle sauce
Instructions
- Preheat oven to 375°F.
- Unroll each puff pastry sheet onto an aluminum baking pan or a baking sheet covered with parchment paper, then place puff pastry sheets crosswise on the pan.
- Place the wheel of brie on top of the puff pastry sheets, in the center of the cross.
- Top brie with chipotle raspberry sauce and fold the puff pastry sheets on top of the brie so it's fully covered.
- Bake in oven for 25-30 minutes, or until pastry is golden brown and cheese melts.
- Serve hot with sliced apples.
