Guacamole Deviled Dragon Eggs

Description

These colorful guacamole deviled dragon eggs will be the perfect appetizer for your Game of Thrones viewing party!


Ingredients

  • 12 large eggs
  • 2 ripe avocados
  • Juice of 1 lime
  • 1 teaspoon salt
  • 2 tablespoons chopped cilantro (plus some for garnish)
  • 2 tablespoons chopped green onions

Instructions

  1. Fill a large pot with 1 inch of water; bring water to a boil and place the eggs in a steamer basket above the water. If you don't have a steamer basket, simply place the eggs in 3/4 in of water. Cover the pan and steam for 17 minutes for 12 large eggs (15 minutes for 6 large eggs).
  2. While eggs steam, prep guacamole filling. Cut avocados in half and remove pits. Squeeze the avocado flesh into medium bowl and mash with a fork until smooth. Stir in lime juice, salt, cilantro and green onions and set aside.
  3. Remove eggs and steamer basket from pot and, fill pot with cold water, place eggs in pot and shake to crack eggs and break up shells without peeling them.
  4. Place each egg in a Ziploc bag with food coloring gel. Massage food coloring over egg shell until completely coated. Allow eggs to sit in Ziploc bags with dye for 30 minutes. Rinse eggs in cold water and peel carefully.
  5. Cut each egg in half and gently remove yolks. Add yolks to guacamole mixture and stir well. Arrange egg halves on a platter and pipe or spoon mixture into egg halves. Top with chopped cilantro and serve!

Notes

We used green food coloring gel, but you can use any color you want! You can also prepare these with a traditional deviled egg filling, using mayonnaise, salt and paprika.
