Ingredients

  • 1 3/4 cups bread flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 very ripe bananas, peeled and mashed
  • 8 tablespoons unsalted butter, melted and cooled
  • 3 large eggs
  • 3/4 cups packed light brown sugar
  • 1 teaspoon vanilla extract
  • 6 ounces semi-sweet chocolate chips
  • 1/2 cup walnuts, toasted and coarsely chopped (optional)
  • 1/2 cup coconut flakes (optional)
  • 1/2 cup raisins (optional)
  • 2 teaspoon turbinado sugar

Instructions

  1. Place oven rack to middle position and heat oven to 350 degrees F. Spray a 9x5-inch loaf pan with vegetable oil spray.
  2. Whisk flour, baking soda and salt together in large bowl.
  3. Place mashed bananas, melted butter, eggs, brown sugar and vanilla in a separate bowl and mix until combined.
  4. Pour banana mixture into dry ingredients and stir until just combined, with some streaks of flour remaining. Fold in chocolate chips, walnuts and coconut flakes, if using.
  5. Scrape batter into prepared pan. Sprinkle turbinado sugar evenly over the top of the loaf.
  6. Bake 55-75 minutes, or until toothpick inserted into center of the loaf comes out clean. Let loaf cool in pan for 10 minutes, then turn out onto a wire rack and let cool for 1 hour before slicing with a bread knife and serving.
