I love banana bread because it reminds me of home, baking with my mom as a girl, which is why I wanted to share my favorite chocolate chip banana bread recipe for Mother's Day.
In addition to being a great way to make use of bananas past their prime, it's so easy to make this chocolate chip banana bread recipe your own. You can toss in chopped nuts, raisins, coconut flakes, fresh blueberries or chocolate chips (my favorite) to mix things up. Or, you can forgo the loaf pan and make banana muffins. Looking for something sweeter? Try my chocolate chip banana cake instead. No matter how you make it, this recipe is great to share with people you love alongside a cup of coffee or a tall glass of milk.
When making the banana bread, make sure to use heavily speckled or black bananas - they'll mash easier, improve the texture and add sweetness to the bread. However, if you don't have overripe bananas on hand, the best way to ripen them is to put under-ripe bananas in a brown paper bag for a few days, which will trap the ethylene gas and cause them to ripen more quickly.
While this bread is best when eaten fresh, you can store it once completely cooled by wrapping it tightly in plastic wrap for up to three days.
